Kappa Chakka Kandhari Foods Pvt Ltd, founded by Regi Mathew and business partner Augustine Kurian, owns two distinctive restaurant brands: Chatti by Regi Mathew, which brings the bold flavors of Kerala’s toddy shop cuisine to a global stage, and Kappa Chakka Kandhari in Bengaluru and Chennai, which pays homage to homestyle cooking inspired by the timeless recipes of mothers and home cooks in Kerala.
In pursuit of preserving Kerala’s rich culinary traditions, Chef Regi embarked on an extensive research journey spanning over three years, visiting 70 toddy shops and 265 homes across the state. Learning from home cooks, toddy shop chefs, and culinary artisans, he meticulously documented over 800 recipes, uncovering untold culinary stories, unrecorded food traditions, and regional treasures. This deep-rooted research forms the very foundation of both Kappa Chakka Kandhari and Chatti.
With Chatti, Chef Regi brings the bold, rustic flavors of Kerala’s toddy shops to New York City. Inspired by the vibrant, community-driven atmosphere of these cherished local spots, Chatti is more than just a restaurant—it’s an experience, a bridge between tradition and modernity, between Kerala and the world.
